I have found several katakana transliterations for Martin and was wondering which was more commonly used or preferred.

1. マルチン
2. マルティン
3. マーチン
4. マーティン

1, 2 and 3 all seem to be recognised as Martin by various online translators, but 4 seems to be translated as Martyn for some reason (it is in Jim Breen's dictionary as such). 4 seems to be the most faithful in terms of pronunciation and I am confused by the spurious use of ル in 1 and 2, when you can just lengthen the vowel sound in マ.

I have heard a couple different ones but was wondering which is the corect one. West is Nishi but can I use that as my last name or is that referring to the directional west and would have to use something else? Thanks for the help.

Going by this link my kanji would be 純粋。Personally though, I would want my best friend or (future) husband to give me a Japanese name when they know the true me. Hopefully it won't have this in it: 鬼 :D

I'd like to know one thing though, how does one know how my true English name is spelled when they see ジェニー?

Well, they don't. They may end up guessing but there are no guarantees that they will do it correctly especially if your name is not quite popular. This is one of the drawback of 'kana-nizing' your name. Of course, you can always let them know your name in English... this is where 名刺 come in handy.
