When you like your coffee strong, you can ask “濃くしてください”(Koku shite kudasai.) which means “Please make it strong.”

I think the translation should be “I buy fair trade coffee.” as you pointed out.
“I only buy fair trade coffee.” woule be translated “私はフェアトレードのコーヒーしか買いません。”
