Yeah, there are a couple of issues here...

Catia san wa josei ichiban oi utsukushii desu

Are you trying to say "Catia is the prettiest woman?"

Watashi wa Wii Nintendo matsu ja arimasen!!!

This sentence is a little strange, and especially since it's written in romaji, I would assume that it means:

"I am not a Wii Nintendo pine tree."

Are you trying to say "I am looking forward to the release of Nintendo's Wii"?
Or are you trying to say "I am NOT looking forward to the release of Nintendo's Wii"?

Yes for the first sentence I want to say: Catia is the prettiest woman

I should probably add in the whole world, is it sekei?

For the second sentence. I want to say: Can't wait for the Nintendo wii.

I guess I look forward to would be a better way to say it

I am not a Wii Nintendo pine tree.

Lol, I have a lot to learn I guess

J'ai vu sur ton site que tu parles Français :-)

Okay, I thought so.

So in sentence 1, you've reversed your adjective & noun order.

Adjectives PRECEDE the noun in Japanese. The same as English. So, the "josei" in this sentence:
Catia san wa josei ichiban oi utsukushii desu

Should come AFTER the adjectives.
Catia san wa ichiban oi utsukushii josei desu

And you don't need to use "oi" together with "ichiban". "Most beautiful" is simply "ichiban utsukushii".
Catia san wa ichiban utsukushii josei desu

And now the sentence is okay grammatically. (カティアさんは一番美しい女性です。)

You might want to consider changing the "wa" to a "ga" depending on the context. I think normally, a "ga" would be used here, because there's only one prettiest woman.

Watashi wa Wii Nintendo matsu ja arimasen!!!

In Japanese, they don't say "can't wait for ~~". They have a similar phrase:
待ちかねる ("machikaneru")/お待ちかね ("omachikane")
But it's much more common to say 楽しみにする ("tanoshimi ni suru").

So:
Watashi wa ~~ wo tanoshimi ni shite imasu.

Means "I am looking forward to something."

Watashi wa Nintendo no Wii to iu geemuki no toujou wo tanoshimi ni shite imasu.

I am looking forward to the release of Nintendo's "Wii" game system. (私は任天堂のウィーというゲーム機の登場を楽しみにしています。)

Oui, je parle, mais ce ne pas bon. J'ai oublié beaucoup.

To say "in the whole world", the Japanese have a special word:
世界一 ("sekaiichi")

To say "she is the prettiest woman in the world" it is:

カティアさんは世界一に美しい女性です。
Catia-san wa sekaiichi ni utsukushii josei desu.

Again, with the "wa" vs. "ga" thing.
