The more kanji you know the better, but here are some you'll see on signs that I think you should learn to recognize:

入口 = entrance
出口 = exit
改札口 = ticket gate
駅 = station
お手洗い = restroom
便所 = restroom
女 = women
男 = men
止まれ = stop
立入禁止 = do not enter
消火栓 = fire hydrant (you'll see this on the roads everywhere)
消火器 = fire extinguisher
薬屋/薬局 = pharmacy
注意 = warning
居酒屋 = japanese pub
開 = open (button in elevators)
閉 = close (button in elevators)
銀行 = bank
温泉 = hot spring (you haven't really been to Japan until you've gone to one of these)
