Don't forget to stop by JapanesePod101.com for more great Japanese Language Learning Resources! -------Lesson Dialog------- ----Formal ---- てんぷら 「天ぷら」は寿司に次いで有名な日本料理と言えるでしょう。 まず、冷水に小麦粉と生卵を溶いた液を作り、その中に魚介類や野菜を入れる…。天ぷらの中身になる、魚介類や野菜はタネと呼び、水・小麦粉・卵を混ぜた液体はタネを包み込むものであることから、衣（着物という意味）と呼ばれます。 そして、衣をつけたタネを160℃から180℃くらいの油でカラッと揚げます。油を切った後(のち）、「天つゆ」という出汁（だし）やしょう油、みりんを混ぜた汁につけて食べます。 代表的なタネは、アジやキス、エビ、イカ、玉ねぎ、なす、かぼちゃ等で、四季折々の食材が使われます。天つゆに大根をすりおろした「大根おろし」を入れたり、天つゆの代わりにゆずなどかんきつ類の絞り汁をかけたり、塩をつけたりして食べることもあります。一般家庭ではしょう油やソースをかけることも多いです。 また、天ぷらそのものを楽しむ食べ方だけでなく、すこし手を加えアレンジしたメニューも人気があります。白いご飯に天ぷらをのせて甘じょっぱいタレをかけると「天丼」、うどんやそばに天ぷらをのせたら「天ぷらうどん」「天ぷらそば」。 天ぷらが広く庶民に普及したのは江戸時代と言われており、当時江戸の庶民達は、屋台で串にさした揚げたての天ぷらを楽しんでいたそうです。 ----Formal Vowelled---- てんぷら 「てんぷら」は すし に ついで ゆうめいな にほんりょうり と いえるでしょう。 まず、れいすい に こむぎこ と なまたまご を といた えき を つくり、その なか に ぎょかいるい や やさい を いれる…。てんぷら の なかみ に なる、ぎょかいるい や やさい は タネ と よび、みず・こむぎこ・たまごを まぜた えきたい は タネ を つつみこむもの で ある こと から、ころも（きものといういみ）と よばれます。 そして、ころも を つけた タネ を160ど から 180ど くらい の あぶら で カラッ と あげます。あぶら を きったのち、「てんつゆ」という だし や しょうゆ、みりん を まぜた しる に つけて たべます。 だいひょうてきな タネは、アジやキス、エビ、イカ、たまねぎ、なす、かぼちゃ など で、しきおりおり の しょくざい が つかわれます。てんつゆ に だいこん を すりおろした「だいこんおろし」を いれたり、てんつゆ の かわり に ゆずなど かんきつるい の しぼりじる を かけたり、しお を つけたり して たべる こと も あります。いっぱん かてい ではしょうゆ や ソース を かける ことも おおいです。 また、てんぷら そのもの を たのしむ たべかた だけ でなく、すこし て を くわえ アレンジ した メニューも にんき が あります。しろいごはん に てんぷら を のせて あまじょっぱい タレ を かける と「てんどん」、うどん や そば に てんぷら を のせたら「てんぷらうどん」「てんぷらそば」。 てんぷら が ひろく しょみん に ふきゅう した の は えどじだい と いわれて おり、とうじ えど の しょみんたち は、やたい で くし に さした あげたて の てんぷら を たのしんで いた そう です。 ----Formal Romanization---- Tempura "Tempura" wa sushi ni tsuide yūmei na Nihon ryōri to ieru deshō. Daihyōteki na tane wa, aji ya kisu, ebi, ika, tamanegi, nasu, kabocha nado de, shikioriori no shokuzai ga tsukawaremasu. Tentsuyu ni daikon o surioroshita "daikon oroshi" o iretari, tentsuyu no kawari ni yuzu nado kankitsurui no shiborijiru o kaketari, shio o tsuketari shite taberu koto mo arimasu. Ippankatei de wa shōyu ya sōsu o kakeru koto mo ōi desu. Mata, tenpura sono mono o tanoshimu tabekata dake de naku, sukoshi te o kuwae arenji shita menyū mo ninki ga arimasu. Shiroi gogan ni tenpura o nosete amajoppai tare o kakeruto "tendon", udon ya soba ni tenpura o noseta ra "tenpura udon" "tenpura soba". Tenpura ga hiroku shomin ni fukyū shita no wa Edo jidai to iwarete ori, tōji edo no shomintachi wa, yatai de kushi ni sashita agetate no tenpura o tanoshinde ita sō desu. ----Formal English---- Tempura After sushi, it's probably fair to say that tempura is the next most famous example of Japanese cuisine. First, make a liquid from wheat flour and raw egg dissolved in cold water, then put seafood or vegetables in it. The seafood or vegetables that will become the filling of the tempura are called the "tane" ("seed"), or ingredients; while the liquid made from water, wheat flour, and egg mixed together used to wrap up the "tane" is known as the "koromo" (which means "clothing"), or batter. Then, the battered ingredients are fried in oil until crisp at about 160 to 180 degrees.
