If you’re using “itai -painful”, the part which aches is usually marked by particle “ga” not “wa”.

For takai either sentence pattern I introduced is OK.
And for pattern (2), particle “wa” can be replaced with particle “ga”, so your sentence, “Nihon no furuutsu GA takai desu” is also OK.
It just that your sentence sounds like you’re comparing with something else.

ex) Nihon no furuutsu wa takai desu “Japanese fruits are expensive.”

But when talking about my eye we are using

[Subject] no [ something ] GA [ adjective] desu

Why is this, and why couldn’t we say ‘watashi no me WA itai desu’

‘watashi no me ga itai desu’ - this is stating that your eye hurts, but as Japanese does not use pronouns when the subject is obvious, it would be more natural just to say ‘me ga itai desu’.

‘watashi wa me ga itai desu’ - this sounds as if you’re comparing yourself to someone else; for example, if you were standing with some friends talking about your aches and pains, and your friend said ‘watashi wa nodo ga itai desu’ (my throat hurts), you could reply with ‘as for me, my eye hurts’ (‘watashi wa me ga itai desu’) and it would sound natural.

I don’t know which website you’re talking about, but are you sure they said that sentence pattern applied to ANY adjectives?

1. [Subject] wa [something ] ga [ adjective] desu.
=”as for subject, something is adjective”
ex) Nihon wa furuutsu ga takai desu
“Talking about Japan, fruits are expensive” or “Fruits are expensive in Japan”
and
2. [Subject] no [ something ] wa [ adjective] desu.
=”subject’s something is adjective”
ex) Nihon no furuutsu wa takai desu “Japanese fruits are expensive.”

They’re both correct sentence structure. Which sentence pattern you use depends on the adjective and what you’re talking about.
For adjective indicates “ability”, “desire”, “preference” or “emotion”, you have to use the (1) pattern.
