This sounds like it beats the Colonel any day! In the States our image of Japanese food isn’t friend chicken. I think we imagine sushi and miso soup and rice. So this was an interesting eye-opener!

A quick lapse in concentration can result in an even quicker visit to the hospital, so I’d recommend using one of these type of strainers to carefully put food in and out of the hot oil.

A couple of questions for the resident chef: I use cornstarch for Chinese cooking, is this different from potato starch? And is cornstarch different from cornflour? Also, what do you do with the oil after you use it? Can you keep reusing it?
Anyway, some really useful stuff not just for cooking but for eating in general

Thanks for the cooking lesson guys. When I first went to Japan the way I started to understand the language was through watching cooking shows - Kyo No Ryori! Learnt some of the best things from that programme. This is brining back all those memories. When I come back to Japan later this year it will be back to the shops then the kitchen.
Hmm…my previous post regarding the number of this lesson seems to be disappear. Anyway, can Jpod101 verify the number of this lesson. The last one was 55, so this one should be 56.

Cornstarch and potatestarch is just different in their raw material. I hear that cornstarch is usually used when you cook Chinese or French. In Japan, we usually use potatestarch, which is called “katakuriko” when we cook Japanese.
As for your another question, I usually reuse the oil a few times.

I’m wondering about the lesson number also. Did I miss Lower Intermediate 56? And does LI2 mean the start of a new season for this level?
