When we say "A is B" pattern, the pattern is "A は　B　です。"
So your sentences need to swap やさしい　and　化学．
化学はやさしいです。　"Chemistry is easy."
化学はやさしくないです。　"Chemistry is not easy."

You're absolutely right about the -kunai/-ku arimasen issue. -Kunai desu is a lot easier to say than -ku arimasen, so you'll hear that a lot more in everyday polite conversation.  The politeness difference between -kunai desu and -ku arimasen is negligible, though. :smile:</description>
